nothing to do with playing the instrument but learned a couple of things. i always thought red beans and rice was made with 'small red beans' also called chili beans. apparently not so and the common kidney bean is used. it is red so truth in advertising there.
i also always wondered why pops would sometimes be thin and sometimes heavy. it was always an odd circumstance.
it's interesting in the recipe that back then they were sensitive to muslims and jews who did not eat pork, providing alternate meat suggestions, and even to those who didn't want red meat and could substitute chicken fat.
