Well, it's a museum goers' paradise. I've been to the:
Rijksmuseum
Stedelijk Museum
Van Gogh Museum.
Hermitage Museum
as well as a killer Gaugin display.

See if you can get in to a performance by the Netherlands Dance Theater. Awesome.

See if there any performances by the Concertgebau Orchestra.

Jazz: Bimhuis and the Paradiso.
Check your local listings.

There used to be a reputable music store in the city centre but unfortunately it closed a few years ago.

As for performances and events, you may find this site helpful.

Kehaulani already listed most museums. Besides the ones he mentioned, there’s also a science/physics oriënted museum called NEMO. Definitely worth checking out if you’re into that.

And if you’re interested in some folklore, the outdoors museum Zaanse Schans is only a 10-15min train ride away from Amsterdam.

UPDATE: my partner just informed me that the Amsterdam Light Festival coïncides with your visit. It’s a display of light art throughout the city and you can either walk or enjoy it by boat.

I studied at the Amsterdam Conservatory once. Amsterdam is just such a cool city. I am envious. Enjoy!

Been there, done some of that, would do it again.

It has been many years but when I was there you could tour the Heineken brewery. You needed to book in advance in those days.
