Do you guys have any recommendation on what earplugs/hearing protection I should use?
I have sensitive ears but I haven't been diagnosed with anything.
I have weird angled, narrow ear canals and most earplugs hurt and irritate my ears.
I play drums.
Should I get a pair of custom molded plugs?

Just watched this video from a custom earplug company called Big Ear Inc. Do you think a pair of these will work?

Yes!! I use Sensaphonic and also play drums!
