What 3 sonatas would you advise me to be able to play if I were being required to play a sonata during an audition?

Hindemith across the board. Must be a good one.

Hindemith is a staple, and a really meaty piece! If you're willing to expand to include some concerti, I'll add the Haydn, Hummel, and Neruda (Haydn appears on many orchestra auditions). Arutunian Concerto is terrific, as is the Enescu Legende and the Bozza Sonatine.

The George Antheil is a really nice sonata, one of my favorites.

Very lyrical. Great showcase for a beautiful sound.

Both Tom Stevens and Mark Gould have recorded it (among others?). The music was out of print for a long time, but I think you can find it now if you really look.
